Our sugar shack consists of 3,000 taps, with a possibility of 5,000 taps. In 2002-2003, we installed a pipeline system with sap extractor, a vacuum pump and a reverse osmosis along with a syrup filter press. Our evaporator is a conventional wood fired arch type.
